Svolgerà un ruolo fondamentale nella gestione della propria partita, garantendo una preparazione attenta, precisa e coerente con gli alti standard della nostra struttura. Contribuirà attivamente al lavoro di squadra, dimostrando autonomia, spirito di leadership e una forte attenzione al dettaglio.
Sarà in grado di organizzare e supervisionare le attività della propria area di competenza con professionalità e dedizione, creando un ambiente armonioso che favorisca il corretto svolgimento del servizio quotidiano.

Principali responsabilità e mansioni:
Gestirà in autonomia la propria partita, occupandosi della gestione e organizzazione dell'area assegnata, dalla selezione degli ingredienti alla loro lavorazione, garantendo sempre la massima qualità e precisione nella tempistica
Lavorerà in stretta collaborazione con lo Chef e il Sous Chef, supportandoli nella pianificazione delle attività quotidiane per garantire che ogni piatto rispetti gli elevati standard gastronomici dell’hotel
Supervisionerà il lavoro dei Commis di Cucina, guidandoli nelle operazioni quotidiane e assicurandosi che il loro lavoro venga eseguito con la massima attenzione al dettaglio e alla qualità
Monitorerà e manterrà gli standard qualitativi dei piatti durante tutto il processo di preparazione, garantendo che vengano serviti in tempo e rispettando gli alti standard previsti dal ristorante
Si occuperà della corretta gestione e pulizia della propria area di lavoro, mantenendo il rispetto delle normative igienico-sanitarie e delle procedure operative previste dalla cucina
Gestirà gli ingredienti e le materie prime, assicurandosi che siano correttamente conservati e che il lavoro proceda in modo ordinato ed efficiente, riducendo gli sprechi e ottimizzando l’uso delle risorse
Mantenendo una comunicazione fluida e continua con la sala e con gli altri reparti, garantirà il corretto svolgimento del servizio, con particolare attenzione alla tempistica e alla presentazione dei piatti.&lt;br /&gt;&lt;br /&gt;

Following this you will pick a specialism in one of these areas, and you will continue to develop your supervisory/managerial skills for the final year of your programme
32 hours hotel operational work plus 8 hours per week on a study day  
Monday-Sunday shift pattern. Weekend and evening shifts will be part of your shift pattern

To assist in managing the Equestrian department and team members to provide the highest level of care and presentation of the horses and unprecedented service levels to our clients
To be a driving force in delivering an Equestrian establishment with the best reputation in the hotel and equine industries with loyal clients who book regularly.&lt;br /&gt;&lt;br /&gt;
Stable Duties –Managing horses daily routine, feed and exercise to keep them fit and well schooled for guests to ride safely.
Managing horses shoeing, worming, saddlery, dentistry and veterinary requirements. 
Carry out daily tasks including feed, hay, muck out, turn out, groom, bandage, keep the stable, horses and all equipment looking immaculate at all times.
Guest Interaction – Dealing with enquiries, bookings and requests from internal and external guests in a timely and appropriate manner.
Fitting guests with safety equipment before riding, keeping safety equipment in accordance with best practice guidelines (replacing when worn/unsafe) looking clean and organised in lockers at all times.
Teaching guests of the hotel and local clients on our ponies and horses with knowledge, enthusiasm and care for safety at all times.
Managing daily horse allocations for teaching, ensuring well being of horses and safety of guests maintained as a priority.
People:  - Mobilize&amp; inspire team members &amp; supervisors to build a high performing team in order to achieve business goals &amp; service standards
Mentor, train &amp; coach team members
Manage shift coverage, work load &amp; resource distribution within &amp; across teams
Interviewing, hiring, induction &amp; succession planning of staff 
Identify training needs, design &amp;  track training for department
Monitor &amp; evaluate team performance
Admin
Assist the Equestrian Manager with contacting guests to book and reconfirm rides
Assist with the management of the individual horse/pony files and ensuring they are all up to date on a regular basis
Daily management of the yard and assigning tasks to team members
Assisting the Equestrian Manager with the orders, farrier, vet booking
Assist to source further horses/ponies  for loan/lease/purchase as business levels require and subject to budget allowances
Health &amp; Safety
Comply with all statutory and company health and safety, fire, bomb and security regulations
Ensure job required certificates are kept up to date – 1st Aid, Child Protection, CRB checks
Review and update departmental risk assessments including monthly area assessment forms
Check tack and equipment weekly for faults and action where necessary
Review SOP’s and facilitate ongoing training for team members as necessary
Ensuring all guests complete disclaimers before riding
Ensuring accident report forms are completed accurately, signed by casualty and submitted to Security in timely manner&lt;br /&gt;

As a Waiter you'll enjoy your work and take pride in delighting our guests:
You will be responsible for efficiently bringing dishes from the kitchen to the designated front-of-house area. This includes ensuring dishes are clean and presentable before they are taken to guests, making sure that all serving equipment is polished and prepared before service begins, preparing tea and coffee according to each guest’s preferences, ensuring that it meets our quality standards.
When serving dishes with special requirements, you will clearly label the dish and ensure that it is delivered to the correct table, and notify the Head Waiter that a special dish is on the tray to ensure proper handling.
You will set up the tables and prepare the equipment before the restaurant opens, along with completing the closing duties at the end of the day such as cleaning tables, storing equipment, and resetting the dining area.
You will need to thoroughly learn the menu to answer guests’ questions and provide detailed information about dishes and beverages

Ensure full compliance with budgeted food and recipe costs, taking ownership of stock control, waste reduction, and kitchen profitability.
Be accountable for staff training, coaching, and one-to-one development, maintaining a well-motivated team and providing consistent feedback.
Oversee food safety and hygiene compliance, ensuring HACCP standards are followed at all times.
Respond to special requests and dietary needs with creativity and care, whether fulfilling bespoke guest orders or catering for special occasions in rooms or suites.

To assist the Executive Chef, Executive Sous Chef and Senior Sous Chef to run the kitchen and enable the team to achieve the highest levels of standards and service
Provide support to the Front of House team to ensure exceptional customer care&lt;br /&gt;&lt;br /&gt;
HACCAP – To follow the day to day procedures including; Diligence, food labelling, weekly deep clean of your section   
Plan the day to day running of all sections of each kitchen (banqueting, breakfast, room service, and staff food) effectively to meet the service standards.
To control the operating costs within all the food outlets to the agreed budgets set.
Carry out quality checks on stock, produce and dishes along with offering training, and understanding of the products to keep the team focussed and allowing them to evolve as chefs.
To be able to run, look after and make decisions in the operation during the absence of senior chefs
Attend and run meetings as and when required, including the daily hotel briefing and the BEO meeting.
Help to plan and create menu designs
Ensure the daily food orders are processed accurately in to the system&lt;br /&gt;
