Position Overview

The primary function of the Cook 3 is to assume the following job responsibilities This culinary position requires good communication skills as well as at least two years of previous line and fine dining experience. A Culinary degree or related hotel experience preferred. Candidates should be able to perform all basic and intermediate cooking skills including preparation of soups, sauces, stocks, frying, broiling.  Provide quality service to ensure positive results reflected in AAA, Forbes standard results and guest comment cards.

Essential Functions & Physical Requirements

Individual needs to have a professional appearance and warm, accommodating confident, enthusiastic, motivating personality and abide by the principles, goals and policies in The Beverly Hills Hotel  Pledge. Due to the nature of the hospitality industry, employees are required to work varying schedules, including holidays, to accommodate the business and demands of the hotel.  Reasonable accommodations may be made to enable individuals with disabilities to perform the essential functions.

  • Communicate any assistance needed during busy periods to the Chef to ensure optimum services. Notify manager if a product does not meet specifications.
  • Check and ensure the correctness of the temperature of appliances and food.
  • Monitor the quantity of food that is prepared and the portions that are served.
  • Ensure proper portion, arrangement, and food garnish to be served.
  • Serve food in proper portions onto proper receptacle.
  • Set-up, clean and break down work station, wash and disinfect kitchen area including tables, tools, knives, and equipment.
  • Prepare ingredients for cooking, including portioning, chopping, and storing, wash and peel fresh fruits and vegetables.
  • Prepare and cook food, leave the prep set up as expectations  to standards for next day of service specially when leaving for days off, clear communications on any missing preparations for next person covering your station,
  • Anticipate and address guests’ service needs.
  • Speak with others using clear and professional language.
  • Develop and maintain positive working relationships with others; support team to reach common goals; listen and respond appropriately to the concerns of other employees.
  • Ensure adherence to quality expectations and standards.
  • Stand, sit, or walk for an extended period of time.
  • Perform other reasonable job duties as requested by Supervisors.

PHYSICAL REQUIREMENTS

To perform this job successfully, an individual must be able to perform each essential duty satisfactorily.  The requirements listed below are representative of the knowledge, skill, and/or ability required.  Reasonable accommodations may be made to enable individuals with disabilities to perform the essential functions.

Must be able to bend, stoop, squat and stretch to fulfill cleaning tasks occasionally.
Requires grasping, writing, standing, sitting, walking, repetitive motions, bending, climbing, listening and hearing ability and visual acuity.
Must have physical stamina to lift, carry, push and pull moderate amounts of weight up to 50lbs.  Ability to stand for long periods of time.
Ability to work flexible schedule and various shifts, including but not limited to, days, nights, weekends and holidays.
Temperature generally is moderate and controlled by hotel environmental systems; however, must be able to work in extreme temperatures like freezers (-10°F) and kitchens (+110°F), possibly for one hour or more.

Qualifications and Desirables

Requires good communication skills. 3 years of previous line experience preferred. Four star, four diamond hotel experience desired. Culinary degree or related hotel experience is preferred. Candidates should be able to perform all basic and intermediate cooking skills. Able to work multiple stations in the kitchen. Requires moderate supervision and training.

 

Desire for more knowledge pertaining to the culinary field. Clear fluent conversational English. Fluent bilingual technical conversation vocabulary (English/Spanish) would be an asset.

Ability to provide legible communication. Ability to read and interpret documents such as recipes, memos, safety rules, operating and maintenance instructions, and procedure manuals.  Ability to write routine reports and requisitions.  Ability to speak effectively before groups of customers or employees of organization. Ability to respond to and creatively resolve guest inquiries or complaints.
